I put up a new post this weekend on Greetings Citizens.  I don't know why the main page isn't loading properly, and it's very frustrating.  I think the individual posts are okay, but the main page, with that awesome photo mosaic that I love, is wonky.  Grr.  I hope you bear with me as I try and sort this out!

So I decided to try something new in the kitchen.  I received some awesome eggs from my friend Shelley, who has her own flock, and last night I cooked a chicken.  I had a craving for an omlete (I don't make them very often), and I decided to add chicken, because...why not?  Ham and cheese go into an omlete, so why not chicken?

While I am proud of how it turned out, I admit that the taste was...meh.  I think I should have added more spices.  While the combination of chicken and egg was fine, the whole thing was just too bland.  So, the Chicken Omlete experiment was a dud.  It happens.

I gotta say, that omlete sure turned out purdy!

It's a beautiful omelet but.. yeah. Chicken + eggs = meh, IMHO.

Still, there are combinations to be tried. Many years ago in Eugene, OR I had an omelet that I still think of as The Omelet They Will Serve In Heaven, and all it had inside was crispy home-fried potatoes, sour cream, and sauteed onions. It was fantastic and I have tried ever since to replicate it, with not very good results.

Mmmm, I want to try the Omlete of Heaven! Anything with crispy potatoes is going to be 100% awesome.

You're right! I knew it needed a sauce of some kind but couldn't figure out exactly what!

What gorgeous eggs too! Hot sauce fixes everything... :)

It was a shame to have to break those beautiful eggs, but they were crying out to be eaten!

Those eggs are gorgeous and the omelet is beautiful and I am now hungry. :-)

If you like a southwest-y flavor, I'd suggest some cumin and maybe a bit of chili powder for the chicken.

As for the omelet in heaven... Forget the 72 virgins, gimme 72 omelets! ;-)
